    A non-tomato based chili is about as chili as chili with no beans which is to say it ain't chili. Word!!!!

    Just curious as to what and how that (white sause stuff) worked???
    I do agree though beans and tomatoes has gotta go into chili...
    I ain`t never had none of that white stuff...

    A guy I work with claimed to make the best 'white chili' in the midwest. So, he brought some in one day last year. Well, turns out it had no resemblence or flavor remotely like red chili, so I don't know what the rules are, if any. Kind of like brownies vs. blondies. I think it's sort of made up to make white stew people feel better about their messes.

    I think I started the white chilli question, so = What I had was white like a fridge. Had all the flavor of a normal chilli and was close to being firehouse hot. Couldn't determine what critter the meat was but it sure wasn't chicken, duck or any bird. I'm guessing elk. Instead of beans it had what I took to be minature dumplings in a fairly thick but not dusty dry base. The cook would not tell me what went into it but it was good enough that I'd like to try to make a big kettle of it for the next chilli supper for the local fire dept. Any ideas ?
