    Thank goodness they will mix it up, I like both. Original by itself and crispy with Tabasco sauce, biscuits and potatoes and gravy to balance it.

    First of two dinners that we, and others donate for a dinner for the homeless and mentally challenged. Fresh out of the smoker, the stuffing and giblet gravy, potatoes and cranberry sauce still in the works. Next week it will be times two.     HEB Grocery store runs pretty good sales on meat, this one was $56.00, when not on sale it's almost double. They have a great butcher counter and will cut to specs. This one I had them cut the bones away then tied back to the roast.

    That's about the same as here in L.A. My BIL buys one about once a month, pays about $90-$100 bucks.

    I made a pot of Great Northern beans using turkey stock and dark meat. Came out yummers, but when it's cold, it forms into a gelatinous mass with beans and meat inside.
